Low Fat Barbecued Chicken And Beans Recipe

Ingredients

  • 1 tablespoon canola oil
  • 1 package about 1 pound barbecue-seasoned boneless, chicken breasts
  • 16 ounces baked beans
  • 1 tablespoon ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon cider vinegar
  • 1/2 teaspoon spicy brown mustard
  • salt, to taste
  • ground black pepper, to taste

Method

  1. In large nonstick skillet, over medium-high heat, heat oil.
  2. Add chicken breasts; saute 4 to 5 minutes on each side.
  3. Add beans, ketchup, sugar, vinegar, mustard, salt and pepper.
  4. Partially cover and simmer 5 minutes, until chicken is cooked through.
  5. Serve hot.
  6. Makes 4 servings.
  7. Preparation time: about 5 minutes.
  8. Cooking time: About 13 to 15 minutes.
