Ingredients
- 4 blood oranges
- 6 cups torn mixed salad greens, or lettuce
- 12 ounces shrimp in shell, cooked, peeled and deveined
- 1 papaya or mango, peeled and sliced , blood orange dressing,
- 1/3 cup low-fat mayonnaise
- 3 tablespoons blood orange juice
- 1 tablespoon blood orange peel, shredded
- 1 tablespoon jalapeno pepper, seeded and finely chopped
- 2 teaspoons lemon or lime juice
- 1/8 teaspoon chili powder
Method
- Finely shred 1 tablespoon peel from blood oranges; reserve for dressing.
- Peel and thinly slice blood oranges.
- Divide greens among four plates.
- Top with shrimp, blood orange slices, and papaya or mango.
- Serve with Blood Orange Dressing.
- Makes 4 servings.
- Blood Orange Dressing: Stir together 1/3 cup low-fat mayonnaise, 3 tablespoons blood orange juice, the reserved blood orange peel, 1 tablespoon seeded and finely chopped jalapeno pepper, 2 teaspoons lemon or lime juice, and 1/8 teaspoon chili powder.
