Low Fat Duckling Stir-Fry Recipe

Ingredients

  • 2 tablespoons vegetable oil
  • 2 tablespoons minced gingerroot
  • 2 teaspoons minced garlic
  • 1/4 teaspoon red pepper flakes
  • 1 cup carrots, sliced into 1/8-inch rounds
  • 1 cup diced red bell pepper
  • 1 cup diced green bell pepper
  • 3/4 cup chopped celery
  • 2 cups cooked duckling, cut into bite-size pieces
  • 3/4 cup onion wedges, separated
  • 1/2 cup canned whole baby sweet corn, drained, cut in half lengthwise
  • 1/4 cup low-sodium stir-fry sauce, prepared
  • 3 cups cooked rice
  • 2 teaspoons sesame seeds, toasted, optional
  • Method

  • In large skillet or wok, over high heat, heat vegetable oil.
  • Add ginger, garlic and red pepper flakes.
  • Stir-fry about 1/2 minute.
  • Add carrots, red pepper, green pepper and celery.
  • Stir-fry about 3 minutes.
  • Add duckling, onion, corn and sauce.
  • Stir-fry about 2 minutes, or until duck is heated.
  • Serve over cooked rice.
  • If desired, garnish with toasted sesame seeds.
  • Note: One duckling yields 3 1/2 to 4 cups diced meat.
