  • 6 peeled eggplant slices, 1/4 inch thick
  • 1 egg white, beaten

  • 1 tomato, sliced
  • 1/2 cup reduced-fat shredded mozzarella cheese
  • 2 tablespoons chopped fresh basil leaves
