  • 4 halibut fillets, skinned
  • –6 to 8 ounces each
  • salt, to taste
  • freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • nonstick cooking spray
  • 1/4 cup finely chopped red onion
  • 1/2 teaspoon minced garlic
  • 4 large ripe tomatoes, peeled
  • — seeded and chopped
  • 1/4 cup dry white wine
  • 1/4 cup chopped flat-leafed parsley
  • 1/4 cup chopped fresh basil
  • 1.Prepare charcoal or gas grill or preheat broiler.
  • 2.Season fillets with salt and pepper; brush on both sides with oil.
  • 3.In large noncorrosive saucepan, heat cooking spray over medium heat.
