Low Fat Nacho Snackers Recipe

Ingredients

  • 1/2 cup shredded low-fat cheddar cheese
  • 1 small pickled jalapeno pepper, chopped
  • 1 medium tomato, chopped
  • 14 melba rounds or toasts
  • Method

  • In small bowl, combine cheese, jalapeno pepper and tomato.
  • Spoon 1 tablespoon mixture onto each melba round.
  • Place 4 to 6 nachos on microwaveable dish.
  • Microwave on High until heated through, about 45 seconds.
  • Repeat with remaining nachos.
  • To bake in conventional oven, preheat oven to 400°F.
  • Bake prepared nachos on a cookie sheet until heated through, about 5 minutes.
  • Makes 14 servings.
  • Preparation time: About 7 minutes.
  • Microwave time: About 45 seconds.
  • Conventional oven time: About 5 minutes.
