Low Fat Pasta Rice Pilaf Recipe

Ingredients

  • 1 tablespoon olive oil
  • 3/4 cup orzo, or 4 ounces spaghetti , broken into 1-inch pieces
  • 1 cup long-grain white rice
  • 3 cups water
  • 1 teaspoon salt

Method

  1. In a large saucepan, heat oil over medium heat.
  2. Add orzo (or spaghetti) and cook, stirring, until golden, about 3 minutes.
  3. Add rice and stir for 1 minute more.
  4. Add water and salt and bring to a boil.
  5. Reduce heat to low, cover and simmer until liquid has been absorbed and pasta is tender, 15 to 20 minutes.
  6. Fluff with a fork before serving.

MAKES ABOUT 5 CUPS, FOR 6 SERVINGS.
