Low Fat Plum Ketchup Recipe

Ingredients

  • 1 1/2 pounds red or black plums, 5 to 6 medium , pitted and quartered
  • 2 cloves garlic, minced
  • 1/3 cup packed light brown sugar
  • 1/3 cup cider vinegar
  • 1/3 cup water
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon cayenne pepper
  • 1 cinnamon stick, 2-inch

Method

  1. In a large heavy saucepan, combine all ingredients.
  2. Bring to a simmer, stirring frequently.
  3. Reduce heat to low and simmer, stirring occasionally, until plums have cooked down to a puree, 35 to 45 minutes.
  4. Remove from heat and let cool.
  5. Discard cinnamon stick.
  6. Transfer to a bowl or storage container.
  7. The ketchup will keep, covered, in the refrigerator for up to 1 week or in the freezer for up to 6 months.
  8. Makes about 2 1/4 cups.
