Low Fat Roasted Pork With Apricots

  • 1 cup low-sodium chicken stock, plus 2 tablespoons

  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/8 teaspoon ground cumin
  • 1 1/2 pound pork loin

  • 1 teaspoon minced garlic
  • 1 cup orange juice
  • 1 tablespoon worcestershire sauce
  • 1/2 cup julienned dried apricot halves
  • 1/4 cup sliced almonds, toasted
