Low Fat Roasted Red Pepper Vinaigrette Recipe

Ingredients

  • 1/4 cup apple juice
  • 1/4 cup cider vinegar
  • 2 tablespoons white onion
  • 1 clove garlic, pressed, up to 2
  • 1 pinches rosemary and thyme
  • 1/2 teaspoon dried wholeoregano
  • 1/2 teaspoon dry mustard powder
  • 1/2 teaspoon paprika
  • 1/2 a roasted red bell pepper
  • 5 tablespoons orange juice
  • 1 teaspoon ginger, minced
  • 1 teaspoon garlic, minced
  • 1 tablespoon lite soy sauce
  • 1/4 cup rice vinegar
  • 1 pinch cayenne, optional

Method

  1. Blend thoroughly, salt to taste, and chill overnight.
  2. Whisk together all ingredients with a fork.
