Low Fat Salmon Hash Recipe

Ingredients

  • 1 tablespoon vegetable oil
  • 1/2 cup chopped onion (about 1 medium)
  • 1/2 cup chopped green bell pepper, (about 1 small)
  • 1/2 cup chopped red bell pepper, (about 1 small)
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 clove garlic, crushed
  • 2 cups diced cooked potatoes about 2
  • 1 medium
  • 1 can salmon (16 ounces) drained
  • and
  • flaked
  • lemon wedges.
  • Method

  • Heat oil in 10-inch nonstick skillet over medium-high heat.
  • Saute onion, bell peppers, salt, pepper and garlic in oil.
  • Stir in potatoes and salmon.
  • Cook uncovered, stirring frequently, until hot.
  • Serve with lemon wedges.
  • SERVINGS (ABOUT 1 CUP EACH).
