Ingredients
- 2 cooked beef tenderloin steaks
- 1 teaspoon vegetable oil
- 1 medium onion, about 1/2 cup , cut into 2- by 1/4-inch strips
- 1/2 cup au jus natural-style gravy
- 2 tablespoons prepared horseradish
- 1 tablespoon tomato paste
- 4 ounces fresh mushrooms, sliced, about1 1/2 cups
- 1/4 cup fat-free sour cream
- 2 cups hot cooked rice, or cholesterol-free noodles
- chopped parsley, optional
Method
- Cut tenderloin steaks into 1/4-inch slices.
- In small bowl, mix gravy and horseradish.
- Heat oil in a 10-inch nonstick skillet over medium-high heat.
- Saute onion in oil.
- Stir in beef, gravy, tomato paste and mushrooms; reduce heat to medium-low.
- Cover and cook 6 to 8 minutes, until hot.
- Just before serving, stir in sour cream.
- Serve over rice and sprinkle with parsley.
- Makes 2 servings.
- Preparation time: 25 minutes.
- Cooking time: 15 minutes.
