Malted Milk Chocolate Cheesecake Recipe

Ingredients

CRUST:

  • 1 cup shortbread cookie crumbs
  • 1/3 cup walnuts
  • 2 tablespoons sugar
  • 8 tablespoons unsalted butter, melted
  • 1 3/4 cup milk chocolate, melted
  • 1/2 cup heavy whipping cream
  • 1/2 cup malted milk powder
  • 2 pounds cream cheese, softened
  • 1 cup granulated sugar
  • 4 extra-large eggs, at room temperature
  • 1 cup sour cream
  • 2 teaspoons pure vanilla extract

Method

  1. Preheat oven to 300F
  2. In a food processor, pulse cookies, walnuts and sugar until finely ground
  3. Stir in butter
  4. Press into the bottom and 1 inch up the sides of a 9 inch springform pan
  5. Chill for 30 minutes
  6. In a small saucepan, bring heavy cream to a boil
  7. Remove from heat and whisk in malted milk powder
  8. Cover and let steep for 10 minutes
  9. Strain cream and set aside
  10. In a large mixing bowl, beat cream cheese and sugar until fluffy
  11. Add the eggs one at a time until just combined
  12. Stir in sour cream and vanilla
  13. Stir in the strained cream and melted chocolate until well combined
  14. Pour into crust
  15. Place cheesecake pan in a baking pan filled with 1 inch of water
  16. Bake for 90 to 100 minutes, until center is almost set
  17. Cool, cover and chill overnight
  18. Garnish suggestion – drizzle with melted chocolate
