Maple-Pecan Waffles Recipe

Ingredients

Makes 4 servings

  • 1¾ cups all-purpose flour
  • 1/3 cup coarsely ground pecans
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups soy milk
  • 3 tablespoons pure maple syrup
  • 3 tablespoons vegan margarine, melted

Method

  1. Lightly oil the waffle iron and preheat it
  2. Preheat the oven to 225°F
  3. In a large bowl, combine the flour, pecans, baking powder and salt
  4. Set aside
  5. In a medium bowl, whisk together the soy milk, maple syrup and margarine
  6. Add the wet ingredients to the dry ingredients and blend with a few swift strokes, mixing until just combined
  7. Ladle 1/2 to 1 cup of the batter (depending on the instructions with your waffle iron) onto the hot waffle iron
  8. Cook until done, 3 to 5 minutes for most waffle irons
  9. Transfer the cooked waffles to a heatproof platter and keep warm in the oven while cooking the rest of the waffles
