Margarita Cheesecake Recipe

Ingredients

CRUST:

  • 1 1/4 cups graham cracker crumbs
  • 1/4 cup unsalted butter, melted

FILLING:

  • 3 8-ounce packages cream cheese, softened
  • 1 1/4 cups light sour cream
  • 3/4 cup plus 2 tablespoons sugar
  • 2 1/2 tablespoons triple sec or other orange liqueur
  • 2 1/2 tablespoons tequila
  • 2 1/2 tablespoons fresh lime juice
  • 4 large eggs

TOPPING:

  • 3/4 cup light sour cream
  • 1 tablespoon fresh lime juice
  • 1 tablespoon sugar

Method

  1. Preheat oven to 350F
  2. In a medium bowl, combine graham cracker crumbs and butter
  3. Press into the bottom and 1 inch up the sides of a greased 9 inch springform pan
  4. Chill for 1 hour
  5. In a large mixing bowl, beat cream cheese until fluffy
  6. Add in sour cream, sugar, triple sec, tequila and lime juice
  7. Beat in eggs one at a time until just combined
  8. Pour into crust
  9. Bake for 50 minutes, until center is almost set
  10. In a small bowl, whisk all topping ingredients together until well combined
  11. Spread evenly over cheesecake
  12. Return cake to unheated oven for 45 minutes
  13. Cool, cover and chill overnight
  14. Garnish suggestion – thinly sliced fresh lime
