Golden Mushroom Gravy Recipe


Makes about 3 cups

  • 1 tablespoon olive oil
  • 1/3 cup chopped onion
  • 1 cup cooked or canned chickpeas, drained and rinsed
  • 1 1/2 cups vegetable broth
  • 1 1/2 cups sliced white mushrooms
  • 1 teaspoon fresh minced thyme or 1/2 teaspoon dried
  • 1 teaspoon fresh minced savory or 1/2 teaspoon dried
  • 1 teaspoon fresh minced sage or 1/2 teaspoon dried
  • salt and freshly ground black pepper


  1. In a medium saucepan, heat the oil over medium heat
  2. Add the onion, cover and cook until softened, about 5 minutes
  3. Stir in the chickpeas and 1/2 cup of the vegetable broth
  4. Transfer the mixture to a blender or food processor and blend until smooth
  5. Set aside
  6. In the same saucepan, combine the remaining 1 cup vegetable broth with the mushrooms over medium heat and bring to a boil
  7. Reduce the heat to low and stir in the chickpea mixture, thyme, savory, sage and salt and pepper to taste, stirring constantly to blend
  8. Serve immediately
  9. If not using right away, cool the sauce to room temperature, transfer to a container, cover and refrigerate until needed
  10. Properly stored, the sauce will keep for 2 to 3 days
  11. Reheat the sauce in a saucepan over low heat until hot
