New England-Style Ham And Beans Pressure Cooker Recipe

Ingredients

SERVES 6 – Cooker: 5- to 7-quart – Time: 8 minutes at HIGH pressure

  • 1/3 cup light or dark molasses (but not blackstrap)
  • 1/3 cup ketchup
  • 1/3 cup firmly packed brown sugar
  • 1 tablespoon Dijon mustard
  • 3 cups water
  • 1 medium white onion, finely chopped
  • 2 cups dried navy beans, soaked and drained
  • 8 ounces ham, diced
  • sea salt and freshly ground black pepper

Method

  1. In a 5 to 7-quart pressure cooker, combine the molasses, ketchup, brown sugar, mustard, and water
  2. Stir to dissolve the sugar and molasses
  3. Add the onion, drained soaked beans, and ham
  4. Stir to evenly coat the beans with the mixture
  5. Close and lock the lid
  6. Set the burner heat to high
  7. When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
  8. Set a timer to cook for 8 minutes
  9. Remove the pot from the heat
  10. Open the cooker with the Natural Release method; let stand for 15 minutes
  11. Be careful of the steam as you remove the lid
  12. Season with salt and pepper to taste
  13. Keeps in an airtight container in the refrigerator up to 4 days and in the freezer up to 3 months
