Oatmeal-Walnut Bread Recipe

Ingredients

Makes 1 loaf

  • 1 1/4 cups boiling water
  • 1/2 cup old-fashioned oats
  • 2 tablespoons vegan margarine
  • 1 1/4 teaspoons salt
  • 1/4 cup pure maple syrup
  • 1 package active dry yeast (21/4 teaspoons)
  • 31/4 cups all-purpose flour or bread flour
  • 1/2 cup finely chopped walnuts

Method

  1. In a large bowl, combine the boiling water, oats, margarine, salt and maple syrup
  2. Stir to combine, then set aside to cool to lukewarm
  3. Add the yeast, then stir in the flour and walnuts and knead until smooth, about 5 minutes
  4. Place the dough in a lightly oiled bowl, turning the dough to coat with oil
  5. Cover with plastic wrap or clean dish towel and let rise in a warm place until doubled, about 1 hour
  6. Test dough by poking it with your finger
  7. Its ready if the indentation from your finger remains
  8. Lightly oil a 9-inch loaf pan
  9. Punch the dough down, then shape it into a loaf and place it in the prepared pan
  10. Cover the pan with plastic wrap or clean dish towel and let rise again for 45 minutes
  11. Preheat the oven to 375°F
  12. Uncover and bake the bread until golden brown, 35 to 40 minutes
  13. Cover loosely with foil if it begins to brown too quickly
  14. After cooling in the pan for 5 minutes, remove the loaf from the pan and cool it on a wire rack for 30 minutes before slicing
