Old-Fashioned Vegetable Soup Slow Cooker Recipe

Ingredients

  • 1½ pounds (680 g) beef round steak, cut in ½-inch (1

  • 1 cup (130 g) thinly sliced carrots
  • 1 pound (455 g) frozen peas
  • 1 pound (455 g) frozen corn
  • 1 pound (455 g) frozen lima beans

  • 1 can (28 ounces, or 785 g) no-salt-added diced tomatoes
  • 1 potato, diced 1 cup (160 g) chopped onion
  • ½ teaspoon basil
  • ¼ teaspoon pepper

Method

  1. Combine all ingredients in slow cooker
  2. Cover and cook on high 4 hours or until vegetables are tender
  3. Remove bay leaf before serving
  4. Yield: 10 servings
  5. Per serving: 446 g water; 269 calories (11% from fat, 37% from protein, 52% from carb)
