Orange-Dressed Asparagus Recipe


Makes 4 servings

  • 1 medium shallot, minced
  • 2 teaspoons orange zest
  • 1/3 cup fresh orange juice
  • 1 tablespoon fresh lemon juice
  • pinch sugar
  • 2 tablespoons olive oil
  • salt and freshly ground black pepper
  • 1 pound asparagus, tough ends trimmed


  1. In a small bowl, combine the shallot, orange zest, orange juice, lemon juice, sugar and oil
  2. Add salt and pepper to taste and mix well
  3. Set aside to allow flavors to blend, for 5 to 10 minutes
  4. Steam the asparagus until just tender, 4 to 5 minutes
  5. If serving hot, arrange on a serving platter and drizzle the dressing over the asparagus
  6. Serve at once
  7. If serving chilled, run the asparagus under cold water to stop the cooking process and retain the color
  8. Drain on paper towels, then cover and refrigerate until chilled, about 1 hour
  9. To serve, arrange the asparagus on a serving platter and drizzle with the dressing
