Orange-Glazed Tofu Asparagus Recipe
Ingredients
Makes 4 servings
- 2 tablespoons mirin
- 1 tablespoon cornstarch
- 1 (16-ounce) package extra-firm tofu, drained and cut into 1/4-inch strips
- 1/3 cup fresh orange juice
- 2 tablespoons soy sauce
- 1 teaspoon toasted sesame oil
- 1 teaspoon sugar
- 1/4 teaspoon Asian chili paste
- 2 tablespoons canola or grapeseed oil
- 1 garlic clove, minced
- 1/2 teaspoon minced fresh ginger
- 8 ounces thin asparagus, tough ends trimmed and cut into 1 1/2-inch pieces
Method
- In a shallow bowl, combine the mirin and cornstarch and blend well
- Add the tofu and toss gently to coat
- Set aside to marinate for 30 minutes
- In a small bowl, combine the orange juice, soy sauce, sesame oil, sugar and chili paste
- Set aside
- In a large skillet or wok, heat the canola oil over medium heat
- Add the garlic and ginger and stir-fry until fragrant, about 30 seconds
- Add the marinated tofu and the asparagus and stir-fry until the tofu is golden brown and the asparagus is just tender, about 5 minutes
- Stir in the sauce and cook for about 2 minutes more
- Serve immediately
