Ingredients
Makes about 2 dozen pieces
- 1/4 cup vegan margarine, room temperature
- 1 1/4 cups confectioners sugar
- 1 cup creamy peanut butter
- 1 teaspoon pure vanilla extract
- 8 ounces vegan semisweet chocolate chips
Method
- Lightly grease a baking sheet and set aside
- In a large bowl, combine the margarine, sugar, peanut butter and vanilla and cream together until well mixed
- Use your hands to roll the dough into small balls
- Insert a toothpick into the top of each ball and place them on the baking sheet
- Put them in the freezer to firm up
- Melt the chocolate chips in a double boiler or microwave
- * Remove the peanut butter balls from the freezer and dip them into the melted chocolate, leaving the top circle of each ball uncoated
- Place the coated balls back on the baking sheet and refrigerate just long enough so they begin to firm up
- Remove the toothpicks and smooth the tops to cover the holes left by the toothpicks
- Return to the refrigerator to continue firming up, about 1 hour
- Store in an airtight container
