Penne With White Beans Red Chard Tomatoes Recipe

Ingredients

Makes 4 servings

  • 2 tablespoons olive oil
  • 2 garlic cloves, finely chopped
  • 1 medium bunch red chard, tough stems removed and coarsely chopped
  • salt and freshly ground black pepper
  • 1 1/2 cups cooked or 1 can white beans, drained and rinsed
  • 1 1/2 cups ripe grape tomatoes, halved lengthwise
  • 1 pound penne
  • 2 tablespoons finely chopped fresh basil, for garnish

Method

  1. In a large saucepan, heat the oil over medium heat
  2. Add the garlic and cook until fragrant, about 30seconds
  3. Add the chard and season with salt and pepper to taste
  4. Cook, stirring, until wilted, about 3 minutes
  5. Add the beans and tomatoes, reduce heat to low and simmer for 10 minutes, stirring occasionally
  6. Taste, adjusting seasonings if necessary
  7. In a large pot of boiling salted water, cook the penne over medium-high heat, stirring occasionally, until al dente, about 10 minutes
  8. Drain well and transfer to a large serving bowl
  9. Add the sauce and toss gently to combine
  10. Sprinkle with basil and serve immediately
