Ingredients
Makes about 2 cups
- 2 cups chopped fresh pineapple or 1 (14-ounce) can crushed pineapple, drained, juice reserved
- 2 tablespoons sugar
- 2 tablespoons fresh lime juice
- salt
- 3 green onions, minced
- 1 hot red chile, seeded and minced
- 8 fresh basil or mint leaves, finely shredded
Method
- In a saucepan, heat 1/4 cup of the reserved pineapple juice over low heat
- Add the sugar and cook, stirring, until the sugar dissolves
- Remove from the heat, stir in the lime juice and add salt to taste
- Set aside to cool
- In a large bowl, combine the pineapple, green onions and chile
- Pour in the juice mixture and stir to combine
- Stir in the basil and serve
- If not serving right away, cover and refrigerate until needed
- This relish is best if used on the same day that it is made
