Crock Pot Walnut Chicken Slow Cooker Recipe


  • 1 tbsp olive oil, divided onions, chopped
  • 1/3 cup pomegranate molasses
  • 1/2 cup chicken stock tbsp lemon juice
  • ½ tsp cinnamon tsp turmeric
  • 1 tbsp brown sugar
  • 1 tsp kosher salt
  • ½ tsp ground pepper bone-in, skin-on chicken thighs
  • 4 whole peeled garlic cloves
  • 4 stems of fresh rosemary
  • 2 carrots, chopped into 1 pieces
  • 1 cup pomegranate seeds
  • ½ cup chopped parsley


  1. Blitz the toasted walnuts in a food processor until coarse
  2. Sauté onions in a pan of olive oil and add the toasted walnuts and cook for another 2 minutes
  3. Add the pomegranate molasses, chicken stock and lemon juice and mix well and pour into a bowl
  4. Combine turmeric, cinnamon, brown sugar, salt and pepper and coat each piece of the chicken with the spices
  5. Brown the chicken on both sides with some olive oil in the pan
  6. Place the chicken in a crock pot and put the onions and walnut gravy over it
  7. Throw in the garlic cloves and the rosemary stems
  8. Until the gravy begins to bubble, the crock pot should be on high, after that reduce to low and cook for 3 hours
  9. Add the carrots and cook for another 1 ½ hour
  10. Garnish topped with parsley and pomegranate seeds
