Portuguese Beans

  • 1 lb. pink beans (may substitute pinto beans)
  • 2 tsp. ground cumin seed
  • 2 tsp. ground allspice
  • 2 tsp. ground cloves
  • 1 (8 oz.) can tomato sauce
  • 1 lg. onion
  • 1 lb. slab bacon
  • 1/2 lb. linguica (Portuguese sausage)
  • Salt and pepper
  • Method

  • Clean and wash dried beans, no need to soak.
  • Use at least a 3 quart pan, cover beans with 2 inches of water bring to a boil.
  • Add spices and simmer until beans tender.
  • Add meats and simmer until meat are done.
  • Stir in tomato sauce and coarsely chopped onion.
  • Serve with beef or chicken and lots of French bread.
