Portuguese Chorico Bread Recipe

Ingredients

  • 1/4 lb. Chorico
  • 2 c. flour
  • 2 tbsp. sugar
  • 1 tsp. minced instant onion (no substitutes)
  • 1 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. dry mustard
  • 1/4 tsp. salt
  • 1/4 c. margarine, softened
  • 4 oz. (1 c.) shredded sharp cheddar cheese
  • 1 c. buttermilk
  • 2 eggs, beaten
  • 1 c. black olives, chopped

Method

  1. Heat oven to 350 degrees
  2. Grease a 9×5 or 8×4 loaf pan
  3. Remove casing from Chorico and chop coarsely
  4. In fry pan brown Chorico; drain and set aside
  5. Lightly spoon flour in measuring cup, level off
  6. In large bowl combine flour, sugar, dry onion, baking powder, baking soda, dry mustard and salt
  7. Blend well
  8. Using pastry blender or two knives, cut in margarine until crumbly
  9. Add cheese, buttermilk and eggs
  10. Stir until well blended
  11. Stir in cooked Chorico and olives
  12. Spoon evenly into prepared pan
  13. Bake in preheated 350 degree oven for 40-50 minutes on second shelf from bottom of oven
  14. Remove from pan
  15. Cool on wire rack
