Portuguese Sausage Potato Soup Recipe

Ingredients

  • 3 c. water
  • 4 oz. smoked garlic sausage
  • 1/2 lb. Russet potatoes, peeled, sliced
  • 4 c. canned chicken broth
  • 1 lg. kale bunch, stems removed, leaves thinly sliced
  • 2 tbsp. olive oil

Method

  1. Bring 3 cups water to boil in heavy large saucepan
  2. Pierce sausage several times and add to water
  3. Poach 15 minutes
  4. Drain sausage, reserving poaching liquid
  5. Return liquid to saucepan
  6. Cut sausage in half lengthwise
  7. Cut crosswise into 1/4 inch wide slices
  8. Set aside
  9. Add potatoes and broth to poaching liquid
  10. Simmer until potatoes are tender, about 25 minutes
  11. Transfer half of potatoes and liquid to processor and puree
  12. Return puree to saucepan
  13. Add kale and oil and simmer until kale is tender, about 5 minutes
  14. Mix in sausage and heat through
  15. (Can be made 1 day ahead
  16. Cover and chill
  17. Rewarm over medium heat, stirring frequently
