Portuguese Sherry Cake Recipe

Ingredients

  • 1 (2 layer) size pkg. yellow cake mix
  • 1 (3 3/4-3 5/8 oz.) instant vanilla pudding
  • 4 eggs
  • 3/4 c. butter flavored cooking oil
  • 3/4 c. cream sherry
  • 1 tsp. butter flavor
  • 2 tsp. ground nutmeg
  • 1/4 c. granulated sugar
  • 1 tsp. cinnamon
  • –TOPPING:–
  • 1 c. sifted powdered sugar
  • 2 tbsp. milk
  • 1/2 tsp. vanilla
  • 1/2 tsp. butter flavor
  • Method

  • Combine cake mix, pudding mix, eggs, oil, sherry, butter flavor and nutmeg
  • Blend at low speed, until moist
  • Beat at medium speed 2 minutes
  • Pour 1/3 batter into well greased and floured 10 inch tube pan
  • Combine together 1/4 cup granulated sugar and 1 teaspoon cinnamon
  • Sprinkle 1/2 of cinnamon-sugar mixture over the batter in pan
  • Add another 1/3 of batter
  • Sprinkle other 1/2 of cinnamon-sugar mixture, then top with remaining 1/3 of batter
  • Bake at 350 degrees for 45-50 minutes
  • Let cool 10 minutes
  • Remove to wire rack
  • Topping: Mix 1 cup sifted powdered sugar, 2 tablespoons milk, 1/2 teaspoon vanilla and 1/2 teaspoon butter flavor
  • Spoon over warm cake
