Portuguese Sherry Cake Recipe
Ingredients
1 (2 layer) size pkg. yellow cake mix
1 (3 3/4-3 5/8 oz.) instant vanilla pudding
4 eggs
3/4 c. butter flavored cooking oil
3/4 c. cream sherry
1 tsp. butter flavor
2 tsp. ground nutmeg
1/4 c. granulated sugar
1 tsp. cinnamon
–TOPPING:–
1 c. sifted powdered sugar
2 tbsp. milk
1/2 tsp. vanilla
1/2 tsp. butter flavor
Method
Combine cake mix, pudding mix, eggs, oil, sherry, butter flavor and nutmeg
Blend at low speed, until moist
Beat at medium speed 2 minutes
Pour 1/3 batter into well greased and floured 10 inch tube pan
Combine together 1/4 cup granulated sugar and 1 teaspoon cinnamon
Sprinkle 1/2 of cinnamon-sugar mixture over the batter in pan
Add another 1/3 of batter
Sprinkle other 1/2 of cinnamon-sugar mixture, then top with remaining 1/3 of batter
Bake at 350 degrees for 45-50 minutes
Let cool 10 minutes
Remove to wire rack
Topping: Mix 1 cup sifted powdered sugar, 2 tablespoons milk, 1/2 teaspoon vanilla and 1/2 teaspoon butter flavor
Spoon over warm cake
