Potato Salad With Olive Oil And Green Onions Pressure Cooker Recipe

Ingredients

SERVES 6 – Cooker: 5- to 7-quart – Time: 7 minutes at HIGH pressure

  • 1½ cups water
  • 3 pounds new red or white potatoes, left unpeeled and halved or quartered, depending on their size
  • 1/3 cup cider vinegar
  • leaves from ½ bunch fresh flatleaf parsley, finely chopped
  • 1 bunch green onions (white parts and a few inches of the green), trimmed and chopped
  • ¼ cup olive oil
  • sea salt and freshly ground black pepper

Method

  1. Place a trivet in a 5- to 7-quart pressure cooker
  2. Add the water
  3. Place the potatoes in a steamer basket and place in the pot
  4. The water should not touch the potatoes (pour some out if there is too much)
  5. Close and lock the lid
  6. Set the burner heat to high
  7. When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
  8. Set a timer to cook for 7 minutes
  9. Remove the pot from the heat
  10. Open the cooker with the Natural Release method; let stand for 15 minutes
  11. Be careful of the steam as you remove the lid
  12. The potatoes should be tender when pierced with the tip of a knife and still hold their shape
  13. Transfer the hot potatoes to a serving bowl or storage container
  14. Pour the vinegar over the potatoes
  15. Let stand, uncovered, at room temperature until cooled and the vinegar is absorbed, about 30 minutes minimum
  16. Add the parsley, green onions, oil, and salt and pepper to taste
  17. With a rubber spatula, gently toss the potatoes to evenly coat with the ingredients
  18. Serve immediately or cover and store in the refrigerator up to 3 days
  19. Summer Potato Salad with Tuna: Substitute Champagne vinegar or sherry vinegar for the cider vinegar
  20. If using sherry vinegar, look for the Spanish brand Ortiz, a 100-year-old company
  21. Add one 6-ounce can or jar olive oil-packed tuna, drained and broken into chunks, in Step 5
