Potato Soup Slow Cooker Recipe

Ingredients

  • 2-3 potatoes, peeled and diced
  • 700 ml water
  • 2 L low-salt vegetable broth
  • 2 360 g diced onion
  • ½ cup (50 g) diced celery
  • ½ cup (65 g) diced carrots
  • ¼ teaspoon pepper
  • 1½ cups (355 ml) evaporated milk
  • 2 tbsps (12 g) chopped fresh parsley

Method

  1. Combine all ingredients except milk and parsley in slow cooker
  2. Cover and cook on high 7 to 8 hours or until vegetables are tender
  3. Stir in milk and parsley
  4. Yield: 8 servings
  5. Per serving: 452 g water; 296 calories (14% from fat, 16% from protein, 71% from carb)
