Provencal White Bean Salad Recipe


Makes 4 servings

  • 4 ounces green beans, trimmed and cut into 1-inch pieces
  • 3 cups cooked or 2 (15.5-ounce) cans Great Northern or other white beans, drained and rinsed
  • 1/3 cup minced red onion
  • 1 cup ripe cherry tomatoes, halved
  • 1/4 cup pitted nicoise olives
  • 1/3 cup olive oil
  • 3 tablespoons tarragon vinegar
  • 1 teaspoon Dijon mustard
  • 2 garlic cloves, minced
  • 2 tablespoons minced fresh parsley
  • 1/4 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper


  1. Steam the green beans until just tender, about 7 minutes and transfer them to a large bowl
  2. Add the white beans, onion, tomatoes and olives and set aside
  3. In a small bowl, combine the oil, vinegar, mustard, garlic, parsley, sugar, salt and pepper
  4. Whisk until blended and pour over the salad
  5. Toss gently until well mixed
  6. Taste, adjusting seasonings if necessary and serve
