Prune Pinwheel Newtons Recipe

Ingredients

  • Serving Size : 1
  • 2 cups pitted prunes
  • 1/2 cup orange juice
  • 1 cup butter – softened
  • 1 cup packed brown sugar
  • 3 Eggs
  • 4 cups flour
  • 2 teaspoons allspice
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt

Method

  1. In container of electric blender puree prunes with orange juice until smooth scraping sides as needed; set aside.
  2. In large bowl cream butter and sugar until fluffy.
  3. Add eggs, one at a time, beating well after each addition.
  4. Combine dry ingredients.
  5. Blend into creamed mixture.
  6. Divide dough into halves.
  7. Chill 1 hour.
  8. Roll out each portion on lightly floured board to a 10×15 inch rectangle.
  9. Spread each rectangle almost to edges with prune mixture, equally divided.
  10. Roll up tightly as for jelly rolls, starting from long sides.
  11. Wrap in aluminum foil; freeze up to one month.
  12. When ready to bake, remove from freezer and cut into 1/3″ slices.
  13. Place on greased baking sheets about 1″ apart.
  14. Bake in 350 degree oven 15 to 20 minutes, until edges are lightly browned.
  15. Transfer to wire racks to cool.
  16. Makes 7 to 8 dozen cookies.
