For the mole sauce

  • 1/2 tablespoon olive oil
  • 1 tablespoon minced garlic
  • 1/2 cup chopped onion
  • 1 (28-ounce) can crushed tomatoes
  • 3 tablespoons tomato paste
  • 3 tablespoons cacao powder or 60%+ dark chocolate powder
  • 1 tablespoon melted raw honey
  • 1 (5-ounce) can chopped or diced chipotle in adobo sauce
  • 1/2 tablespoon ground chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 11/2 pounds (five 5-ounce) boneless, skinless chicken breasts
  • sea salt and black pepper
  • garnish: fresh cilantro, sliced jalapeno

Method

  1. To a nonstick skillet over medium-high heat, add the olive oil, garlic, and onions
  2. Cook the onion for 3 to 5 minutes, or until translucent and beginning to brown, being careful not to burn the garlic
  3. Add to the slow cooker
  4. Add the tomatoes, tomato paste, cacao powder, honey, chipotle, chili powder, cumin, coriander, and cinnamon to the slow cooker and mix everything together until smooth
  5. Season to taste with salt and pepper, but keep in mind that it will take time :For the flavors to meld together
  6. Nestle the chicken breasts in the sauce, then cover and cook on high for 4 to 6 hours or on low for 6 to 8 hours
  7. When the cycle is nearly 80 percent complete, remove the chicken breasts from the slow cooker and place them in a bowl
  8. Pull apart the chicken using two forks, then place it back into the slow cooker
  9. Stir everything together and allow it to cook :For the remaining time
  10. Mix everything together one last time, then season to taste with sea salt and pepper
  11. Allow the dish to cool slightly to allow the sauce to thicken
  12. Garnish and enjoy!
