Quick And Easy Pineapple Cheesecake Recipe


  • 30 vanilla wafers, finely crushed
  • 3 tablespoons butter or margarine, melted
  • 1/2 teaspoon ground cinnamon
  • 1 envelope Knox unflavored gelatin
  • 1 can (8 oz.) crushed pineapple, drained, liquid reserved
  • 3 packages (8 oz.) cream cheese, softened
  • 3/4 cup sugar
  • 1 tub (8 oz.) whipped topping, thawed


  1. Preheat oven to 400F
  2. In a large bowl, combine crushed wafers, butter and cinnamon
  3. Press into the bottom of a 9 inch springform pan
  4. In a small saucepan, stir together gelatin and reserved pineapple liquid over low heat, until gelatin is dissolved
  5. In a large mixing bowl, beat cream cheese and sugar until smooth
  6. Add in gelatin mixture
  7. Refrigerate until slightly thickened
  8. Whisk pineapple and whipped topping into cream cheese mixture
  9. Spoon into crust
  10. Cover, and chill overnight
