Quinoa Salad With Black Beans Tomatoes Recipe


Makes 4 servings

  • 3 cups water
  • 1 1/2 cups quinoa, well rinsed
  • salt
  • 1 1/2 cups cooked or 1 can black beans, drained and rinsed
  • 4 ripe plum tomatoes, cut into 1/4-inch dice
  • 1/3 cup minced red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 2 tablespoons sherry vinegar
  • 1/4 teaspoon freshly ground black pepper


  1. In a large saucepan, bring the water to boil over high heat
  2. Add the quinoa, salt the water and return to a boil
  3. Reduce heat to low, cover and simmer until the water is absorbed, about 20 minutes
  4. Transfer the cooked quinoa to a large bowl
  5. Add the black beans, tomatoes, onion and parsley
  6. In a small bowl, combine the olive oil, vinegar, salt to taste and pepper
  7. Pour the dressing over the salad and toss well to combine
  8. Cover and set aside for 20 minutes before serving
