Quinoa Summer Squash Pilaf Recipe


Makes 4 servings

  • 1 tablespoon olive oil
  • 1 medium red onion, minced
  • 2 medium yellow summer squash or zucchini, chopped
  • salt and freshly ground black pepper
  • 1 1/2 cups quinoa, well rinsed
  • 3 cups vegetable broth or water
  • 1 cup ripe grape or cherry tomatoes, quartered
  • 1/4 cup chopped fresh basil


  1. In a large saucepan, heat the oil over medium heat
  2. Add the onion, cover and cook until tender, 10minutes
  3. Add the squash and season with salt and pepper to taste
  4. Cook, uncovered, until softened, 5 minutes
  5. Stir in the quinoa, then add the broth and bring to a boil
  6. Reduce heat to low, add salt to taste, cover and simmer until the quinoa has absorbed all the liquid, 20 to 30 minutes
  7. When ready to serve, transfer to a serving bowl and stir in the tomatoes and basil
  8. Serve immediately
