Radiatore With Walnut Parsley Pesto Recipe


Makes 4 servings

  • 2 garlic cloves
  • 1/2 teaspoon salt
  • 1/2 cup lightly toasted walnut pieces
  • 1/2 cup chopped fresh parsley
  • 1/2 teaspoon crushed red pepper (optional)
  • 1/3 cup olive oil
  • 1 pound radiatore
  • 1 tablespoon walnut oil (optional)


  1. In a food processor, combine the garlic and salt and process until garlic is minced
  2. Add the walnuts, parsley and crushed red pepper, if using and process until ground to a paste
  3. With the machine running, stream in the oil and process until well blended
  4. Set aside
  5. In a large pot of boiling salted water, cook the radiatore over medium-high heat, stirring occasionally, until al dente, about 10 minutes
  6. Drain well, reserving 1/3 cup of the pasta water
  7. Transfer the pasta to a large serving bowl
  8. Add the reserved pasta water to the pesto and blend to make a smooth sauce
  9. Add the pesto to the pasta and toss gently to combine
  10. Drizzle with the walnut oil, if using and serve immediately
