Italian Purple Cabbage Rolls Recipe

  • 1 large head purple cabbage
  • 1 cup farro or brown rice, uncooked
  • 3 cups water or no-salt-added chicken broth
  • 11/4 pounds 93% lean ground turkey
  • 1 egg, beaten
  • 1 tablespoon garlic powder
  • 1/2 cup chopped onion
  • 1 green bell pepper, seeded and diced
  • 2 teaspoons ground sage
  • 2 teaspoons Italian seasoning (optional)
  • sea salt and black pepper
  • 21/2 cups chunky marinara sauce, reduced fat and/or low sodium
  • 1 cup shredded reduced-fat mozzarella cheese

Method

  1. Carefully cut or remove 6 large leaves from a head of cabbage-the bigger, the better; they are your vessels in this recipe
  2. Bring a pot of water to a boil, then drop in the leaves
  3. Cook for 2 to 3 minutes, until they are soft and malleable
  4. Set them aside
  5. Bring the 3 cups of water or broth to a boil, then add the farro
  6. Cover and cook for 30 minutes, or until the farro has softened and can be fluffed with a fork
  7. Set aside to cool
  8. Preheat the oven to 400°F
  9. To a large bowl, mix the the turkey, egg, garlic powder, onion, bell pepper, sage, Italian seasoning (if using), salt, black pepper, 2 tablespoons of pasta sauce, and 2 cups of cooked and cooled farro (see Tip)
  10. In a baking dish, spread 1 cup of the pasta sauce over the bottom
  11. Take a small fistful of the meat mixture and roll it into a cylinder
  12. Put the meat at the bottom of a cabbage leaf, roll up the bottom, fold in the sides, then continue rolling the leaf
  13. Repeat
  14. Depending on the size of the leaf, you may want to add more or less meat; however, I recommend keeping the amount of meat added to each leaf the same
  15. Place the rolls side by side on top of the sauce in the baking dish
  16. Pour the remaining sauce over the rolls, then sprinkle the shredded mozzarella over the top
  17. Cover the baking dish with foil and bake for 55 minutes at 400°F
  18. Remove the foil :For the final 5 minutes of cooking to brown the top of the cheese
  19. Pair these rolls with roasted vegetables
