Red Bean Bulgur Chili Recipe


Makes 4 servings

  • 2 tablespoons olive oil
  • 1 medium red onion, chopped
  • 1 medium red bell pepper, chopped
  • 3 garlic cloves, minced
  • 3 tablespoons chili powder
  • 1/2 teaspoon dried oregano
  • 1 (14.5-ounce) can diced tomatoes, drained
  • 2 cups tomato salsa
  • 3 cups cooked or 2 (15.5-ounce) cans dark red kidney beans, rinsed and drained
  • 1 cup water
  • 1 cup bulgur
  • 1 (4-ounce) can chopped mild green chiles, drained
  • 1/2 teaspoon salt


  1. In a large saucepan, heat the oil over medium heat
  2. Add the onion and bell pepper, cover and cook until softened, about 7 minutes
  3. Stir in the garlic, chili powder and oregano and cook, uncovered, until fragrant, 1 minute
  4. Add the tomatoes, salsa, beans, water, bulgur, chiles and salt
  5. Cover and simmer, stirring occasionally, until the bulgur is tender and the chili is thick and flavorful, about 45 minutes
  6. Serve immediately
