Red Onion Apple Relish Recipe


Makes about 1 1/2 cups

  • 1 tablespoon olive oil
  • 1 medium red onion, finely chopped
  • 1/3 cup sugar
  • 1 Granny Smith or other crisp tart apple
  • 3 tablespoons apple cider vinegar
  • salt


  1. In a saucepan, heat the oil over medium heat
  2. Add the onion and stir in the sugar
  3. Cover and cook, stirring occasionally, until the onion is soft, about 20 minutes
  4. Peel, core and shred the apple and add it to the onion mixture
  5. Stir in the vinegar and salt to taste and cook, uncovered, until the mixture is thick, about 20 minutes
  6. Transfer to a bowl and set aside to cool to room temperature
  7. If not using right away, cover and refrigerate until needed, then bring back to room temperature before using
  8. Properly stored, this relish will keep for 2 to 3 days
