Rockfish Stew Seafood Recipe

Ingredients

  • 1 1/2 pounds rockfish fillets — thawed if necessary
  • 2 tablespoons oil
  • 2 medium green peppers — chopped
  • 2 carrots — thinly sliced
  • 1 large onion — chopped
  • 1 large garlic clove — minced
  • 1 can tomatoes – (28 oz)
  • 1 can tomato juice – (12 oz)
  • 1 1/2 teaspoons Worcestershire sauce
  • 1 teaspoon sugar
  • 1 teaspoon basil — crushed
  • 1/4 teaspoon salt
  • 1/2 cup dry white wine or fish stock

Method

  1. Cut rockfish into 1-inch pieces
  2. Heat oil in large pot
  3. Saute green peppers, carrots, onion and garlic until onion is tender
  4. Add tomatoes, tomato juice, Worcestershire sauce, sugar, basil and salt
  5. Bring to boil; simmer 10 minutes
  6. Add wine and rockfish
  7. Simmer 8 minutes longer or until rockfish flakes easily when tested with a fork
  8. This recipe yields 6 to 8 servings
