Rum-Spiked Soy Nog Recipe

Ingredients

Makes 4 to 6 servings

  • 1 quart chilled vanilla soy milk or other nondairy milk
  • 1 cup vanilla vegan ice cream
  • 1 tablespoon pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 3 tablespoons dark rum, or more to taste
  • 1/4 teaspoon ground nutmeg, plus more to garnish

Method

  1. In a blender or food processor, combine all the ingredients and blend until smooth and creamy
  2. Pour into eggnog cups and garnish with nutmeg
  3. Serve immediately
  4. Alternatively, you can prepare the Nog ahead of time and refrigerate until ready to serve
  5. Just be sure to stir or whisk it well before serving
