Salmon Loaf Slow Cooker Recipe

Ingredients

  • 455g canned salmon
  • ½ cup (120 ml) egg substitute
  • 1½ cups (175 g) bread crumbs
  • ¼ cup (40 g) finely chopped onion
  • 2 tbsps (28 g) unsalted butter, melted
  • 1 tbsp (4 g) fresh parsley
  • 1 tbsp (15 ml) lemon juice
  • dash cayenne

Method

  1. Drain salmon; reserve juices
  2. If necessary, add water to juices to make ¼ cup (60 ml) liquid
  3. Combine liquid with remaining ingredients except the salmon
  4. Flake salmon; stir into mixture
  5. Shape into round loaf slightly smaller in diameter than slow cooker
  6. Line cooker with foil to come up 2 or 3 inches (5 or 7
  7. 5 cm) on sides
  8. Place loaf on foil, not touching sides
  9. Cover and cook on low for 5 hours
  10. Yield: 6 servings
  11. Per serving: 82 g water; 268 calories (35% from fat, 34% from protein, 31% from carb)
