Sausage Stew Slow Cooker Recipe

Ingredients

  • 2 tbsps (28 ml) olive oil
  • 1 cup (160 g) chopped onion
  • 1 pound (455 g) turkey kielbasa, thinly sliced
  • 2 cans (15 ounces, or 425 g) no-salt-added great northern beans, undrained
  • 2 cups (490 g) no-salt-added tomato sauce
  • 115g diced green chilies
  • 1 cup (130 g) thinly sliced carrots
  • ½ cup (75 g) chopped green bell pepper
  • ¼ teaspoon Italian seasoning
  • ½ teaspoon thyme
  • ¼ teaspoon black pepper

Method

  1. Heat in oil in a large skillet over medium-high heat
  2. Saute onions and kielbasa until onions are soft
  3. Transfer onions and kielbasa to slow cooker
  4. Add all remaining ingredients to cooker and stir together well
  5. Cover and cook on low 8 to 10 hours or until vegetables are tender
  6. Yield: 8 servings
  7. Per serving: 214 g water; 320 calories (39% from fat, 20% from protein, 41% from carb)
