Savory Amaranth Burgers Recipe


Makes 4 patties

  • 1 cup water
  • 1/2 cup amaranth
  • salt
  • 3 tablespoons olive oil
  • 1/2 cup minced onion
  • 1/2 cup shredded carrot
  • 1/2 cup ground walnuts
  • 1 teaspoon soy sauce
  • 2 tablespoons wheat gluten flour (vital wheat gluten)
  • 2 tablespoons minced fresh parsley or cilantro Freshly ground black pepper


  1. In a small saucepan, bring the water to a boil over high heat
  2. Add the amaranth and salt to taste and reduce the heat to low
  3. Cover and simmer until the amaranth is cooked, about 15 to 20 minutes
  4. Set aside
  5. In a large skillet, heat 1 tablespoon of the oil over medium heat
  6. Add the onion and carrot
  7. Cover and cook until soft, 5 minutes
  8. Stir in the walnuts and cook, uncovered, 2 minutes longer
  9. Transfer the mixture to a large bowl
  10. Add the soy sauce, flour, parsley and salt and pepper to taste
  11. Add the cooked amaranth and stir to mix well
  12. Form the mixture into 4 patties
  13. Heat the remaining 2 tablespoons oil in a large nonstick skillet
  14. Add the patties and cook until browned on both sides, turning once, about 10 minutes total
  15. Serve immediately
