  • 4 to 5 large scallops per person
  • or
  • 7 to 5 large scallops
  • or
  • 9 to 12 medium scallops


  1. Provencal: Saute with butter, garlic, tomatoes and basil
  2. Classic: Saute with mushrooms; add cream sauce
  3. Top with Parmesan cheese and bread crumbs; broil until lightly browned and bubbly
  4. Home-style: Bake at 375ºF with butter and lemon juice until flesh is opaque
  5. Top with fresh chopped herbs
  6. Salad: Gently poach; drain
  7. Marinate in herbs vinaigrette until chilled
  8. Serve on lettuce leaf with lemon wedge
