Seitan Brochettes With Peaches Recipe


Makes 4 servings

  • 1/3 cup balsamic vinegar
  • 3 tablespoons dry red wine
  • 3 tablespoons light brown sugar
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh marjoram
  • 2 tablespoons minced garlic
  • 3 tablespoons olive oil
  • 1 pound seitan cut into 1-inch chunks
  • 4 shallots, halved lengthwise and blanched
  • salt and freshly ground black pepper
  • 2 ripe peaches, pitted and cut into 1-inch chunks


  1. Combine the vinegar, wine and sugar in a small saucepan and bring to a boil
  2. Reduce heat to medium and simmer, stirring, until reduced by half, about 15 minutes
  3. Remove from the heat
  4. In a large bowl, combine the basil, marjoram, garlic and olive oil
  5. Add the seitan, shallots and peaches and toss to coat
  6. Season with salt and pepper to taste
  7. Preheat the grill
  8. * Thread the seitan, shallots and peaches onto the skewers and brush with the balsamic mixture
  9. Place the brochettes on the grill and cook until the seitan and peaches are grilled, about 3 minutes per side
  10. Brush with the remaining balsamic mixture and serve immediately
