Seitan Milanese With Panko Lemon Recipe

Ingredients

Makes 4 servings

  • 2 cups panko
  • 1/4 cup minced fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 pound seitan cut 1/4-inch slices
  • 2 tablespoons olive oil
  • 1 lemon, cut into wedges

Method

  1. Preheat the oven to 250°F
  2. In a large bowl, combine the panko, parsley, salt and pepper
  3. Moisten the seitan with a little water and dredge it in the panko mixture
  4. In a large skillet, heat the oil over medium-high heat
  5. Add the seitan and cook, turning once, until golden brown, working in batches, if necessary
  6. Transfer the cooked seitan to a baking sheet and keep warm in the oven while you cook the rest
  7. Serve immediately, with lemon wedges
