Seitan With Apple Chutney Recipe

Ingredients

Makes 4 servings

  • 2 Granny Smith apples, coarsely chopped
  • 1/2 cup finely chopped red onion
  • 1/2 jalapeno chile, seeded and minced
  • 1 1/2 teaspoons grated fresh ginger
  • 3 tablespoons fresh lime juice
  • 2 teaspoons agave nectar
  • salt and freshly ground black pepper
  • 2 tablespoons olive oil
  • 1 pound seitan cut into 1/2-inch slices
  • 1/4 cup apple juice

Method

  1. In a medium bowl, combine the apples, onion, chile, ginger, lime juice, agave nectar and salt and pepper to taste
  2. Set aside
  3. Heat the oil in a skillet over medium heat
  4. Add the seitan and cook until browned on both sides, turning once, about 4 minutes per side
  5. Season with salt and pepper to taste
  6. Add the apple juice and cook for a minute until it reduces
  7. Serve immediately with the apple relish
